YOU CAN CAN, CORN SMUT TRUFFLES, OR CAVIAR IN BELIZE

Corn SMUT is a corn disease, but the FUNGUS is also a restaurant delicacy, high priced like caviar.  Nobody in Belize is yet producing Ustilagomaydis ( corn smut ) deliberately, or collecting SMUT from corn that has caught the fungus. Corn smut is considered a pest in Belize, but you can actually grow corn to enable corn smut as a crop. An export market exists in Mexico that produces about 400 tonnes.
